I ♥ anything lemon...
I ♥ anything blueberry...
I ♥ anything with pretzels...
I ♥ cheesecake ... a lot!
So, when I saw this recipe, of course there was no doubt that I would be giving it a try...like ASAP!!!
It looked super easy and super quick with very few ingredients...Ya'll know that is my favorite kind of recipe ...
I grabbed all the ingredients, and crumbled up the cookie dough and the pretzels...
Then I rolled it all together in a big 'ole pretzel-cookie ball, sprayed my baking dish and then spread that big 'ole pretzel-cookie ball evenly in the bottom and popped it into the oven to bake for 5 minutes...just to set the cookie dough. Then I pulled it out of the oven and I dumped the blueberries on top and gave the dish a shake to level them out.
I grated the lemons for the required two tablespoons of lemon peel (I may or may not have used a bit more lemon peel ),Then I popped the cream cheese (at room temperature) and the sugar into the mixing bowl of my trusty KitchenAid mixer, added the vanilla and lemon peel and got that thing mixin'.
Next I added the eggs and let my trusty KitchenAid mixer run until that mixture was smooth and creamy. Just like the directions said.
I poured all that creamy goodness on top of the pretzel-cookie-blueberry dish and popped the whole thing back into the oven to bake for about 30 minutes. Just till the cream cheese mixture was set on the edges, but still a bit 'jiggly' in the middle. Then I let it sit on my stove top and cool for about an hour and then I refrigerated it until it was time to serve.
I cut it into small squares and put them in cupcake liners for individual servings and topped them with a couple of pretzel pieces and a few blueberries...

This one I put in a pretty little dish to so that I could take a pretty little picture to share with you!
It was absolutely yummy and a huge hit at the little business gathering we had that evening. It was also a hit the next evening when it accompanied the 'Take 2 - Mississippi Mud Brownies' to dinner at G and J's.
Okie dokie, artichokie...that's it for now...got projects to finish and new stuff to start.

There were things about being the wife of an ENTREPRENEUR that I was totally unaware of. As in COMPLETELY in the dark about. Can you say...NO IDEA...do the words 'TOTAL IGNORANCE' mean anything...You get the picture...We've been married almost 9 years now and I think I have finally figured most of it out. That doesn't mean I totally like it...there definately are days that it sure tries to get the best of me...but at least I have learned what to expect. Mostly.

I got an e-mail from Amy on Monday, with the subject of...project! :-)...She sure knows how to get her Momma's attention......in the e-mail was a link to Gypsyrags, a site that takes large tee-shirts and 'feminizes' (is that a word??) to fit and flatter the womanly figure. They have some awesome things they have done with tee-shirts, but Amy is a full-time nursing student and therefore on a really limited clothing budget. Her boy, a/k/a 'Hunky' - (cuz he's a 'Hunk') is taking her to the Nickelback concert this weekend and she wanted to know if I could help her alter a tee-shirt to wear to the concert. I've never done anything like that before, but I'm always up for a good challenge so off she went to search for some cute tee's for us to alter. She ended up finding some real bargains at Plato's Closet for us to work with. We also had a whole bag of tee-shirts that had been intended for Goodwill (sorry Goodwill, maybe next time) from her little (but a whole foot taller) brother...Yay! Practice material!!!
After sorting through my fabric and fat quarter stash we determined that we needed to make a Joann Fabrics run for some cute fabrics for the straps on the tops...any excuse to go to Joann's works for me...just sayin' ...
We get back home and get to work! First, I said to the lil girl, 'tell me whatcha want' with which she replied 'dress my ass with the latest fashion' ... 'cause I wanna be a rockstar' and for those of you who may not be Nickelback fans...those are some of the lyrics from one of their hits --- 'Rockstar'...and we didn't have this EXACT conversation...but sorta, and I thought it would be cute to reference the reason all of this started in the first place...
nevermind....

I love to cook and bake. I think I've mentioned that before. I also love to collect recipes. Lots of recipes. I think I've shared that with you all too. But just in case you might have forgotten or just in case you just popped in for the first time, I wanted to mention it again. You know, just in case it wasn't obvious or anything.
I love a good recipe with lots of pictures. I like to see what things are supposed to look like. This way I can kinda gauge if I'm doing it right or not. I like recipes with simple ingredients that look complicated. I am a sucker for that- 'wow, you made this?!?!' question, (comment, surprise?!?!?) when someone tastes my creations. It gives me that 'look what I've accomplished' feeling and I really like that. Lots.
I found this recipe over at Picky Palate. Jenny sure has some awesome recipes. She also has a cookbook coming out in September of this year and I'm quite excited for her and I look forward to adding it to my collection. Her directions are easy, she shares where she finds many of the ingredients and her pictures are gorgeous. These cookies sounded awesome and I couldn't wait to give them a try. I gathered all the ingredients that she listed...

I usually stay pretty busy making things for others but once in a while I throw in something for us. This makes the Hubby very happy.
I made us a bedrunner!
I finally found a crochet pattern for one that I really liked. I tossed around the idea of making a quilted one and I actually found a few patterns that were interesting, but the idea of more patterns in our room just didn't appeal to me much. I was thinkin' solid something, but with a pattern....sorta...I really didn't know what I was looking for. Then I was surfing e-patterns central one day and I came across this pattern.

I follow this great blog, Lovin' from the Oven, and recently Kim posted an awesome recipe that I had to try out; Cinnamon Roll Pancakes. I had a fun time making them and an even better time eating them! I like pancakes AND cinnamon rolls and let me tell you, when you mix the two of these together it is just amazing!
I must admit however, that I prefer waffles. Yep, there is just something about a nice golden brown crunchy waffle with a drizzle of syrup on it that really satisfies my tastebuds. So yesterday morning I had a thought! (I do that ever now and again...just sayin') Why not make cinnamon roll waffles!!!

A while back, Amy sent me a link to a nifty coupon organizer pattern she found while surfing around on Etsy. She had been looking for a nice coupon organizer that wasn't "cheesy" as she put it. I purchased the pattern and it was sent to me via e-mail almost immediately. It then became another project added to my "to-do list". It took me a few months to get back too it, but for her next birthday I had one of these cute fun organizers ready for her.
She really loves it and had it filled up in no time. She's the Couponista Queen of our family. That girl has coupons for just about everything!
